This recipe makes 12 yummy sausage and egg breakfast muffins that costs little and is very simple.
Ingredients:
1 tablespoon of oil
1/2 cup chopped onion
6 large eggs
1/2 cup milk
1 cup shredded cheddar cheese
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon garlic powder
1/2 pound of ground, cooked sausage
1. Preheat oven to 350 degrees. Grease and lightly flour a 12-cup muffin tin; set aside.
2. Heat oil in a pan on medium heat. Add chopped onion and cook until softened. Cool.
3. Mix together in large bowl eggs, milk, and cheese. Add flour, baking powder, salt, garlic powder, and sausage. Stir until just combined.
4. Fill each muffin cup three-quarters full. Bake 20-25 minutes, until edges start to brown and tops spring back when pressed. Cool slightly before removing from pan.
I enjoyed some yesterday with some homemade hash browns.
