Emailed to me from a reader as a great Cream Soup Substitute in your recipes:
This is a recipe that has worked for me. I add left-over chicken, for cream of chicken soup, a can of mushrooms for cream of mushroom, a few shrimp for cream of shrimp soup., etc. It is designed for a diet low in fat and salt. Celery that is near the top of the stalk can be sliced thinly, and makes a lovely cream of celery soup.
CREAM SOUP SUBSTITUTE
2 cups non fat dry milk powder
¾ cup cornstarch
¼ c, low sodium chicken bouillon
2 tablespoons dried onion flakes
1 teaspoon dried, crushed basil
1 teaspoon dried, crushed thyme
½ teaspoon pepper,
Store in an airtight container.
To substitute for one can of condensed soup,
Combine 1/3 cup of the mix with 11/4
Cups water. Heat to boiling. Cook and stir
until thickened.

I will have to try this one. I have some recipes that call for Cream of whatever soup, but can’t make them now that my granddaughter Malina must eat gluten-free, and most commercially made soups have wheat or modified food starch which can be either wheat or corn.
